We finally did it, we tried beets and they were good!
Sweet potato, beet and beet greens soup -
(Everything was done to taste so I'll just list the ingredients for you and send you on your way!)
Beets with greens (I used four largish beets with their greens)
Sweet potatoes (two large)
Onion (1 medium to large)
Minced fresh ginger (about 2 tablespoons or so)
Vegetable stock (about 6 cups but it depends how much of the heartier items you add, mine was a bit thick)
Salt and Pepper (to taste)
Butter (just enough to sweat the onions)
I peeled the sweet potatoes and pre-boiled them for about 15 minutes. Also, I pre-boiled the beets separately, minus the greens, but skin on for the same amount of time.
Then I sweat the onions in the butter until translucent and added the ginger for another minute or so. I then added the sweet potato and the peeled and sliced beets. I topped all of that off with the stock and then the greens. It simmered lid on until the sweet potatoes and beets were finished and then blended with the immersion blender (best tool ever!). Lastly, I added salt and pepper to taste and served.
It was a success!
